I can't wait for things to go back to the way they were.... I would just really like to go back to the days before the mask. I'm wearing it, and have been since March, but it's slowly killing me....

I hear you.
When the kids were around I used to love to cook for them. And I think that's the thing - I really enjoy the process, but if there's no one there to enjoy the results except me? I loose interest.
I don't usually make a meal for one. I'll batch cook 2, or 3, or 4 pounds of something and then switch up the main meal with a bunch of different sides.
Yep... I know what you mean.

I used to hate cooking for myself. I ended up cooking for four and freezing the extra, which would then go in the bin 6 months later.

We have deliveries now for single people, they deliver a week's worth of groceries of all sorts with menus and recipes for one. A lot of people like it because it works out less expensive than cooking too much.

I've been making soups, cabbage, tortilla, chicken, but nobody else wants any so it sits in the fridge. The longer it sits in there the better the flavor, but after a couple of weeks I gotta toss it. It's hard rationing ingredients out for one.
